Will two EVGA GTX 580 Superclocked be able to run with this power supply?

Yes, but i'd recommend a 1KW personally to give yourself more headroom for overclocking. That's just me....

My friends stock 2600k with my 580 and his 580 in it peaked around 600w on full load with 5 HDD's and 2 SSD's......

So yeah I'd say so.

850w is more than enough.

I can even bench with the cards at 935MHz w/1.15v and my CPU at 4.8GHz with no problems.

Although I'm not sure how I feel about the Thermaltake PSU.

I wouldn't recommend this Thermaltake PSU. Or actually any Thermaltake PSU.

I had my 1090t @1.5v, pump, 12 high speed YLs and 3 GTS 450s overclocked as well. Folding 24/7 This unit would cause me to reboot quite often. I think a lot of it had to do with the heat in the case. Once it got over 40C in there it wasn't too efficient anymore. System mentioned should not be pulling more than 650-700 watts either.
