@ OP - when you post it's a good idea to have your specs listed. When asking a GPU question if we don't know your - monitor resoltuion or PSU we can't really give good advice that pertains to you. Your asking if one GTX 580 can play games on a monitor we don't know what size and if SLI are needed yet have no idea if your PSU can even handle two in SLI.
As for your questions, stay with your current GTX 580 and over clock
it to 875/1750/2062 and you'll be getting an even Pixel Fillrate 42.0 GPixel/s - Texture Fillrate 56.0 GTexel/s - Bandwidth 198.0 GB/s. I'm currently on stock 1.0880v to keep that safely 24/7 and my highest temp is 74C even after hours of online gaming in BF3. I do have a manual fan settings grid over the preset auto fan settings with card. You should do same.

Just to give you some insight why there's no need to upgrade to a second GTX 580 just yet, I posted some benches. Wait until after Kepler comes out. Pricing will drop and you'll get a better deal on the second. After Kepler comes out your best move for highest performance gains when gaming does catch up will be SLI it down the road. A GTX 580 SLI is a beast of a set up with no other dual card set up giving it rival. I know your doing fine with just the one right now.
