Gtx 570 SLI vs 6970 crossfire

I am build a gaming computer. The graphics card is one of the few things I have not chosen/purchased yet. I need to be able to run Crysis Warhead maxed out (including shaders and aa) with 60+fps average (@ 1920x1080). I need to know which one of these would have the best performance regardless of price. Here are my options so far:

GTX 570 1.25 gb SLI
GTX 570 2.5 gb SLI
Radeon HD 2 gb Crossfire
GTX 560 ti 2gb SLI
GTX 580 Lightning xTreme 3gb single
GTX 580 Lightning 1.5 gb single

I am liking some of these options... Here are my specs:

OCZ Z-series 1000w power supply
Asus 24x DVD drive
Hard drive ???
Mobo ???
LANboy air case
Asus ve247h 1080p monitor
GPU ???
i5-2500k processor (I will overclock)
8gb corsair vengeance 1600 ram
Antec Kühler h2o 920 Heatsink *??? = undecided

Which would be best for me? What kind of microstuttering problems will each of the SLI cards have?

Depends. The 580 is the best single card, however you could run 6970Xfire and beat the pants off a single 580. Your best solution would get to obtain two Sapphire 6950 Toxic cards, unlock them by flipping the switch and you would actually beat out real 6970's in Xfire. Toxics ROCK!
GTX 580 in SLI would be the best set up at this time, no need for the 3gb card at your resolution and single monitor, if you where running higher rez or bigger monitor the 3 gig would be the one to get.

HD6950s xfire will max Crysis warhead. You will probably need more than 1.2GB.

I would recommend HD6950s xfire or GTX580sli. The 2.5GB 570s are overpriced.

What if the 6950s don't unlock? What are the odds of that? How would an unlocked 6950 scale against a real 6970?

if you get a Toxic or Dirt3 6950 odds are GREAT! the diff between 6950cf and 6970cf are marginal at best, not worth the extra 180-200 its costs for 6970's.

The 6950 Crossfire are much better for the price and almost the same as 6970 Crossfire because they can be unlocked.

Do the unlocked 6950s get the same performance as a 6970? Can the 6970 be do something similar to unlocking? And also, do I just unlock the card with the switch, in the bios, or do I need some sort of software?

Yes the unlocked AMD 6950 will reach stock performance 6970 level. It can be slightly over clocked from that by a tad.

The AMD 6970 however can be over clocked higher performance but it's not the best over clocker. Hence why the AMD 6950 is such a better price/performance card. For the extra little performance you get for the AMD 6970, it's just not worth it when you can buy a less expensive card that comes close.

Unlocking I've never done. Someone else will chime in. The ones with the BIOS swich option you'd be correct. However there are reference cards that don't have the BIOS switch and you have to flash those with software.

Sapphire AMD 6950 Toxic cards are the best with BIOS switch IMO. May cost a bit more but they are nice cards. I prefer the vapor chamber cooling option that blows hot air exhaust out the rear of your PC as opposed to being dumped inside with open case cooling.

If your not getting a AMD 6950 with BIOS switch then it may or may not unlock. More and more vendors are laser cutting them to disable the shaders that keep that from happening. If you don't like chance then buying the AMD 6970 or one with BIOS switch is your best bet.

The Toxic and the Dirt3 its a flip of the switch. No, there is nothing like unlocking for a 6970, just overclocking. All unlocking is telling the 6950 to run on the 6970 BIOS, it unlocks the extra shaders. The difference between a 6950CF and a 6970CF are with in 10-20 FPS, and they will max ANY game and pull 60+ FPS easy. Most cards dont unlock anymore, but some do. The toxic and Dirt 3 come with a modified BIOS on them, it unlock's the shadders but is not a real 6970 BIOS. the TOXIC with mods is easy the best card out there. Read this for more in depth performance of the TOXIC card vs other 6950's and 6970's.
