I also have a 5870, but I don't encounter any of the problems that you guys are talking about. So a vRAM issue can't be the problem (unless you are running the game with heavy texture overhauls).

Check the temps
research acceptable temps for the card, cpu, and ram
turn down speeds for anything out of the ordinary.
adjust fan speeds(if your comfortable with it)
