I am pretty sure that even a 2500k @ stock clocks might have a hard time with two full and even overclocked GTX 580's.
It might be possible that your CPU is bottlenecking the cards, and considering the fact how easy it is to overclock the Sandy Bridge CPU's, I see no reason why you shouldnt.
4 GHz will most likely even run on stock voltage too, so you wouldnt even have to change that.

A measly 4Ghz OC will net you better min FPS which is what people should pay more attention to IMO. you will rarely see ur MAX FPS in games.
