you can touch the voltage a little bit in afterburner.. just dont mess with the bios. I bumped my voltage from 1.088v to 1.125v and with that so far I have been able to get from 775Mhz to 900Mhz.

If you want to be sure 100%, run all of them. 3DMARK 11 Extreme , Heaven BENCH everything on MAX, FurMARK and you're done.

I generally use Heaven with 16x AF and 8x AA for putting some proper stress on the card, plus some 3dmark 11 runs. I used to test with Kombustor but that practically rapes my card if I start messing with voltage (even stock settings will take it about 20C higher than any other program). Just a slight voltage bump will send temps over 100C and then it'll crash. For comparison's sake, every other program/game tops at around 67C or below, with lower RPM on the fans than what I use for testing.
So yeah, couple of Heaven runs with 3dmark 11, say 2-5 runs on each. Generally if you can get through 2 runs without crashing or artefacting you're set.

My steps to testing GPU OC stability:
Use 3DMark11 ion extreme to build up to the OC you want or the max you can get (is there a difference?) buy running the test after increasing the Core by 5 or 10Mhz a go, (when it hits stability wall, i up the voltage by a notch then continue the Mhz increase but if you are not going to touch voltage i won't go into it).
Once you get the OC as high as can/want to run 3DMark11 a few times (2 or 3).
If it passes that then run Heaven (all settings maxed) 2 or 3 times.
If it passes that then run OCCT 4.0 for an hour.
If it passes that play some games that really stress your system such as BF3, Crysis 2 DX11, etc.
If you can do all this then its good to go.
However, there have been some issues with some games (Crysis 2 DX11) and cards where a voltage bump may been required to run the game at max setting at stock gpu speeds.
Once you can do all this go back and repeat the MHz upping process with the memory.
If you are not playing with your voltage its reasonable easy to find the max stable clock and you shouldn't damage the card but as always, keep an eye on your temps . If you want to start hitting high clocks then you'll need to break that no voltage rule
