Note that all games are not hor+ and thus you won't have the most FOV on 16:9 in all games.
In any case, hor+ games have a fixed vertical FOV. This means that a higher vertical resolution will make images on the screen take more pixels to form, which makes the image clearer. This means that even though 1920x1200 sees less horizontally in hor+ games than 1920x1080, it will have a clearer image. In vert- games, 1920x1080 simply sees less than 1920x1200 vertically, since both have the same horizontal resolution (vert- games having a fixed horizontal FOV). Even then it is a trade off.
Also, you can run 1920x1080 on 1920x1200 monitors if you want to, the reverse is not true. Unless you have a strong hate for black bars, this is once again one benefit for 1920x1200. (assuming those are the paths you're considering).
If FOV is what matters for you the most, a triple monitor setup will give you just that. Most games are in hor+, yes, and they give you a much bigger FOV because your aspect ratio is three times as wide as a single monitor would be.
