#1) Instead of the 120mm fan vent, an area built into the motherboard tray that would allow for a PSU next to the motherboard but above the PCI slots. Certainly wouldn't be the most aesthetically appealing when looking from the outside, but another option.
#2) Allowing for 8 PCI slots and moving the motherboard tray up to allow for a horizontally mounted PSU underneath the motherboard.

I know others have made several comments on this, but I'll add my own.
Position 1 & 2 would require completely re-engineering the MB tray to handle the weight of a PSU, especially something like an AX1200 (which is likely to be used in a case like this). It would also obstruct the PCI slots making even a dual GPU system potentially difficult. On many boards, the PSU in position #1 would obstruct the CPU and could interfere with tubing running to the water block (and forget about air cooling). Of course, there are the aforementioned cosmetic issues. The 3rd position is more doable, but why? Even if everything fit, airflow would be less than optimum.
I like symmetry too, but realistically, you only see one side of the case at a time. If it were me, I'd run a 560 on the MB side (the "good" side) which will fill the space nicely and have a 360 + PSU on the far side which would keep the cabling out of view - JMHO
