Yes, you can install a GUI using a command: http://www.debianhelp.co.uk/gui.htm
Not shure if Debian supports tasksel like ubuntu does, but try the command sudo tasksel

But a couple file server oriented distros are FreeNAS and OpenFiler; they are both pretty good. But a great place to find out about tons of distros is http://distrowatch.com/

If you're already wishing you had a GUI then I'd go with VortexBox as you would just access that laptop's HDD via Network Places and map the drive for future quick access. But to answer your question try Start then Run and type in the IP address of that laptop to access the SAMBA server if it's installed and running.

FYI: You need to use two backslashes "\\" prior to the IP e.g., Start then Run "\\192.168.1.13" (192.168.1.13 being the IP of said laptop) on your Windows machine to access your shares.
