Then I would suggest another 580 now (or wait until Kepler comes out^).
In terms of monitor, the U2711 should be plenty of screen real estate for gaming and Photoshop, especially if you go for another one or two later on

FYI, games I mostly play are:

Starcraft II
Left 4 Dead Series
Mass Effect Series
Borderlands Series
Battlefield 3
and open to ANY CO-OP multi-player game.

In case that changes anything. SCII is the big winner for me.
