Use socket temp at idle and Core temp at full load.
Core temps are no where accurate until the chips under full load.
Also youll find socket temp will be a few C hotter then cores since heat builds up in the socket and around the back or the motherboard since those areas arnt cooled.

Personally Id recommend keeping Core temps under 58C (61 max) and socket temps under 65C (70 max on most boards) when running prime. Games will never get it as hot but you always want a little over head.
