They aren't singling out Apple. They mention the iPad because it's the brand everyone knows. Some people still aren't familiar with the Galaxy Tab. Have you actually tried to talk to the average person? You can't just say "tablet" without making a reference to another product or give a brief explanation. You can, however, just say "iPad' and no clarification is needed. It also makes it infinitely cleaner for search engine results.
Stop being so overly sensitive. Apple wanted to be the innovator of tablets and they have achieved that. But just like you're synonymous with tablets when it's something good - you're also the go-to guy when something is inherently wrong with them.
