With regard to fittings; draw a picture of your loop and that will help you figure out the fittings you will need. The only coolant I use or recommend is Ice Dragon http://icedragoncooling.com/
The Asrock was announced but it is not out yet. I will be purchasing it when it shows up. My last few MB's have Rampage Extreme boards.

My wife does a lot of editing using both Lightroom and photoshop in tandem, and my rig is the only one to handle it. It was running a little sketchy the other day, so I diagnosed what was bottlenecking the operations. I figured it would be the processor, but to my amazement it was the ram! 8GB and a 1GB page file on my SSD were FULL. I was amazed, as I never thought I would need more than 8GB anytime soon. Now take this with a grain of salt, as I am of course running DDR2. But I would consider 16GB of RAM if you plan on running a monster. Note that my GPU, and processor were not maxed out. It was the RAM. I know it's a noob thing to say that MOAR RAM IZ FASTER! And I'm not ignorant. I'm trying to tell you I maxed my 8Gigs. Consider more.

The build looks good except for a few things:

Are you planning on getting three 580s?
If you are just going with SLI then just get a 750 watt at the very most. That leaves plenty for heavy overclocks on both the CPU and GPUs.

There are better fans out that will give you better static pressure at a lower price while keeping noise levels down. I would look at the Swiftech Helix fans and the XSPC xinruilian 2000. The XSPC fans are a bit louder but they do provide some very good static pressure at 3.0mm H2O which is much more then the ones you listed.
