Like others said, the 5970 is faster because it's basically 2x 5870s on 1 PCB. While the 6970 is just a single card.
However with the 5970 microstuttering might be introduced in some games.

I have no problems with 5970 so far except it gets a lil toasty, hence extra cooling when in operation now that "Project Foot Long" is done. And the 5970 can support multi display exactly the way the 6970 can, with dual DVI and a display port (well mini display port)

and White Fire i think you mean the 5870 Eyefinity 6

For BF3, remember it is quite demanding of VRAM so get something with at least 2GB of VRAM. The 5970 doesn't count because each GPU has access to 1GB of VRAM.

Also, you're less likely to have crossfire headaches (although I've never seen microstuttering/bottlenecking/bad scaling on my crossfire setup) if you go for a single GPU card with more VRAM.

I'd say go with a 7950 or wait till the prices fall a bit. The 6970 and 5970 are old tech and the 7900 series prices are yet to fall, their drivers yet to mature.

HD 5970 with play Ultra with 0 MSAA no problem @ 1080 and get much better fps then HD 6970. Increase the resolution and it start to get slower and eventually lose HD 6970.

If you use high MSAA, Eyefinity, or have high resolution texture mods, 1GB VRAM may be become a bottleneck for a 5970. It is dependent upon which games you play and at what settings. A lot of newer games store multiple copies of textures in VRAM for speed reasons, so that may use lots of VRAM.
