For the Opteron route, you would need AT LEAST a 2P and it's only with 4P where they really shine, starting with two PCUs on a quad socket MB is a good way to get going. It will cost more upfront than a 2600K build, but the PPD/W (I know that the OP doesn't pays for his leccy, but there is also the heating issue to be adressed) will be a lot better. A 48 cored G34 Magny Cores will use about 500W and get you around 500k PPD, where a 2600K will use 200-250W and max 95k PPD.

If you want to fold on GPUs, try trading those Radeon for a Nvidia or you could just sell them and put aside the money for future upgrades. With a nice CPU like that I wouldn't wanna drag it down with those Radeons. With only the CPU folding you can get Linux installed, OC to hell and rake in the SMP points. No need to get CD/DVD drive.

If there is enough space for 2-4 GPUs on the board a Nvidia GPU folder rig would be cool (hot, really) populated with 560Ti or above. Go crazy and run 4x590 and you'd need a massive PSU...
