So the 4p motherboard recommended here is the Supermicro H8QGL-IF
It has 3 x 8pin power connections on the board... the PSU listed only has 2... do we need all 3 or can it run just fine with 2?
I am looking to buy a board, PSU, and CPU coolers in the next day or two... need to figure out what all I will need.

I'm using a 1 8 pin -> 2 8 pin adapter. My PSU also only has 2 8 pins as well and I haven't had any problems. I don't think there are many, if any, PSUs who have 3 cpu 8 pin cables.

I'm currently getting 501k PPD out of a 6904 WU. I should be getting more then that though, closer to 580k, need to do a little bit more tweaking. Watts being pulled from the wall is 630-640. In terms of PPD/W, yes I would say it's very much worth it.
