workstation cards run a premium to allow them to use a different driver set more geared to process AutoCAD type work. Also workstation cards tend to have more VRAM as well

It's a sort of niche market, not many people buy them compared to consumer GPUs. The people that do buy them are usually corporations that buy in bulk and get discounts anyway or people who are buying them personally but using a company credit line or something. On the inside, the components are very similar if not identical. It's basically all the extra stuff that defines a workstation class GPU.
The biggest difference is probably the drivers. Professional drivers are optimized for things like CAD, rendering, modeling, photo/video editing, etc., so instead of pure gaming performance, they focus more on accuracy of the product.
There are also special certifications for workstation GPUs. It's almost like the difference between an accredited college and a non-accredited one, you definitely want your degree from an accredited school. Companies buy cards based on these certifications, software vendors like Adobe and Autodesk recommend cards based on these certifications, and clients want their work done on cards that have these certifications. Its like a guarantee that says yes, this is a workstation class card capable of producing accurate products.
