Yeah you can do that. Actually I'm running only dual channel atm with 2 dimms, because I ordered two 8GB (2x4GB) dual channel kits from corsair and the other one hasn't arrived yet. Rig works fine and also benches fine.

Anyways the "X-amount-of-channels" ram kits are mostly marketing tricks. Just go for the best price/perf.
