I've waited this long so I'll probably hang on until the HD 7800 series is released as well.
I'm still kind of surprised that of the last three RPGs I've bought all of them will fill my 1024 MB frame buffer with the stock in game quality options maxed at 1680x1050.

Almost every game I play in 1080p with maxed settings runs from 1000mb-1500mb. In Eyefinity those games take up around 1500mb-2800mb 5896x1080p with 4xAA. If you can get 1 6950 2gb for a good deal and unlock it too 6970 and overclock to 1000/1300-1400, You will run Skyrim LOCKED at 60fps with Maxed settings and Highres textures in 1680-1050. There's also a few edits you can do to the .ini files for the game. If you use Ultra settings and max out the sliders for grass detail, that value in the ini file is 7000(max grass fade), we have changed things like that to 14000 and that's twice the distance of what you set the slider too. When we tested with a 6950 2gb on a 1920x1200p with those settings, the game ran at 60fps and had a few dips to 45 like in Solitude and few other areas, but at the resolution your running, should stay close to 60fps all times.

FYI: 7970 Locks Skyrim at 60fps no matter what settings. With Vsync off it's actually running 100-160fps in 1080p and running eyefinity 5896x1080p around 50-60fps same settings.
