Idea:
Since my RAM only shows up at 800MHz, would it be possible to keep it at that clock speed, but then change other settings to bring the speed up to what it should be? Basically overclocking it at 800MHz?

You could, sure. I'm not entirely sure how it works on LGA 2011 though, but I think you'd just raise the BCLK or the strap up. You could also tighten the timings down some more.

Although DDR3-800 is awfully slow compared to what it should be at.
