Got an update today! First of all, thanks so much for such a positive response.
Also thank you for all your suggestions. They have been a real help!
Bought the 2500k that Upgrade Solution mentioned. It is on it's way and will be installed shortly.
I messed around with the parts in the case today to figure out the best way to fit them inside body. I removed the legs (and got a nice whack in the face pulling them off) and removed the head so that all that was left was the body.
The motherboard fit in just fine through the side doors, but the difficult part was trying to attach the video card to the motherboard inside the case. I noticed that the bracket was getting in the way, so since it is only held on by a few screws I decided to just remove it.

This is after
Even with the bracket removed, I still had trouble getting everything to fit in nicely.
Then I wondered, "What if I remove the cover for the video card? It looks like it could fit right in the middle if I remove the case". So once again I removed more screws and the cover came off easy as pie.
And another after
Now everything fits! It does seem weird to remove the case since it works as a shroud. However, the bottom of the case kind of acts as it's own little shroud.
Here is the motherboard with the video card in the case!
Next thing I'm thinking about until the CPU gets here is how I'm going to cool the rig. I did make a little drawing of what I was thinking:
Originally I just wanted a simple 120MM pulling air in from the bottom, and having a 120MM pushing air out the top. Since the video card is siting so snug in the bottom, I decided to change it to either cujo74's idea of putting a fan (can only be as big as 60MM) in the circle under the neck pulling air through the bottom. The other option is to put 2 80MM (putting a 120MM in the bottom won't fit without cutting up the bottom) fans pulling air at the GPU heatsink and having it exhaust out the back.
The top can fit a 120MM fan nicely and can pull air in to cool everything else, and also exhaust out the back as well.
Let me know what you guys think! Next part will be the PSU and that will probably be ordered when I get paid next Thursday!
