2GB will be enough for 1440p, but a surround setup will be an absolute nightmare for a 2GB card.
Surround at 1080p isn't so bad, the majority of titles, especially DX9 ones are sub 1GB used vram at 5760x1080. I have seen the numbers myself, sometimes 1.5GB seemed to be the sweet spot, especially if you could sacrifice a little AA. With a few exceptions such as benchmarks, even Metro2033 is playable at this resolution with 2GB of VRAM. The 6970s in Trifire wore more than adequate to power it, and they were limited to 2GB of VRAM.
Besides, you run out of GPU performance of a single or even two cards to properly power that resolution in all its fidelity usually before you hit the VRAM wall.
I agree with you though, the GK104 could blow at overclocking and the 7970's headroom may indeed end up faster. But don't forget the % of overclock is not linear to performance AND they can not be compared to each other. A 30% overclock doesn't mean 30% increase in performance, and a Geforce 30% overclock does not equal an AMD 30% overclock in terms of performance gain.
