OP: Either get 3GB 580s, or the 680.

wont the 680 only have 2 gb of ram? and right now atleast in bf3 it seems like the single video card holds up quite well for the resolution im playing at medium settings and using ssao instead of hbao and im maintaining 60 fps

I'm really getting tired of hearing about VRAM......

I'm at 2560x1600, and I have yet to find a game except Crysis that uses more than 1.5GB (Crysis only uses 1800MB by the way, maxed out with mods and AA).

OP:
You can get away with SLI 580's on your PSU. But honestly, I'd wait for the 680 and find out which is better between that and a 7970, and go for either of those. Keep it single GPU if you can, less issues that way. My single 7970 chews through every game I throw at it maxed out with the exception of GTA IV (driver issues due to it being AMD instead of Nvidia).

Do this: Get another 580 (2 580 > 680) and use it till the 780 comes out. Thats your best bet =). Keep in mind MaxWell is coming 2013-2014. Not only 2 580 will be faster than 1 680, but also you will save a lot of money (unless you get a new PSU which will mostly equal the prices).

Now at 1920x1080 or 1920x1200 I would of told you to get a 2Gb GTX680 but since you're at 2560x1600 I'm going to have to tell you to get a 3Gb 7970.

You do not want to be in this situation.

Try again.

Crysis maxed out with every good mod on it at 2560x1600 uses about 1.6GB of VRAM (that's with a ton of AA which isn't needed).
BF3 runs maxed out on two 580's in SLI (1.5GB versions) at 2560x1440. Ask kcuestag (moderator here), he's got 3 of them and that resolution.

I don't know how many times I have to say this....VRAM means very little if you don't have the GPU horsepower to back it up. 1.5GB is perfectly fine for a single high resolution monitor, so long as the card is strong enough to push it. Just like 1GB is honestly just fine for 1080p....so long as the card is strong enough.

yeah so my hp zr30w is 2560x1600 res, honestly im going to try boosting the settings some more and jus keep it at ssao and see if it was the hbao that was raping my frames. If i do decide to go with another 580 gtx i will probably upgrade the psu to a 1k or 1200 watt just to be future proof. right now im running a 750 PC Power and Cooling Silencer Mk II 750W. The newegg psu advisor says that with 2 580 gtx's i should have a power draw of 899 so thats well over my 750 watt psu.

PSU: http://www.newegg.com/Product/Product.aspx?Item=N82E16817703027

New egg says:

Our recommended PSU Wattage: 899 W
