Forgot the sound card

Get a Creative XTrememusic.

I prefer the 750W Silencer over the 1000W. The silencer has a single 60A 12V rail, while the 1000W has a total max load of 66A, over three 12V rails. The extra 6A is not worth more than double the money.

If in the future you don't have enough power for graphics, either add a second PSU (610W silencer for $160) or a dedicated PSU for GPUs, like this 300W FSP for $90

So far looks like you're on track to agreat rig!
If you're worried about overclocking then best thing to do is go SLOW and do your reading. if you're really that nervous, then let us know where in canada you are, there are a few canadians on here, and most of us would be extatic to play with your rig for a bit i second the 'waiting for Quad and DX10' motion. Also, the guys here are right, PSUs and RAM are not a place to skimp.
Finally if you're not comfortable with phase, watercooling is a good call and less finicky. plus in canada, you can stick your rad out the window in the winter and you have instant cascade! lol (sorta)

3-5 grand is a nice budget LOL

that's what I would think when 'no budget'. No need to spend more anyways (except when you want that $2,000 apple monitor)
