They did not dumb down the stories, believe me, the story was always equally as crappy, though enjoyable. Seriously I've played through the entire series for a refresh recently, if you think the first games stories are much better than the new ones you haven't played them recently. The only thing the series did differently is advance the story further, certainly nothing about the story should be that surprising even if you know the RE universe. I like the Puzzles, survival horror, and I think they can mix them in more with the new games, but that doesn't change the fact that even with out them they are still good games. There was nothing that generic about RE5, it was actually probably the best co-op game to come out in a very very long time. Even the reviews for RE5 are generally high, because when it came out it excelled as an awesome action horror game. As I said I was skeptical as well, but when you play it with a friend who loves the RE universe as much as you it's a complete blast. I got the platinum on the PS3 version, the hardest setting was awesome, and it was so good I bought the PC version too. Not only the PC version much much better looking, but it also has some of the best 3D to date.
Also saying I lose creditability because I enjoyed co-op is exactly my point and my problem with the RE purists now, they are just not open minded. You are a prime example of what I'm talking about.
I've already said that RE1 is my favorite in the series, and I mean it. The game changed my life and is still one of my favorite games of all time. I like more of the earlier ones than most of the old ones, but the difference between me and these new RE hating hipsters is I can enjoy the series even if it changed to a different style of game. There are still many aspects of the game that are still present from the originals. I'm also not saying I wouldn't like to see steps back in the old school direction, all I'm saying is pretty much all of the main RE game series games are good.
