I am looking for a high end x79 Mother board for gameing, programing, and video editing
I am looking at the Asus Rampage Extreme IV x79, Gigabyte UD7 X79, or the Gigabyte G1 Assassin 2 x79
What one should i pick?

No one can answer that question except you. The only thing that I can say:
All are good.
I would choose the RE4 but that is just my choice. I dont like the look of the others and the G1 has only 4 DIMM slots.
But that is just personal preference.
From you requirements:
You can game/program/edit with all of them, just the DIMM count on the G1 might be bad for more RAM if you dont want to buy 8GB sticks.

The asus is rock solid, and a very good board,
the UD7 is a very special board, very nice and solid,
never really seen great bang/buck with the g1, but with that said ......
all are good,
u cant go wrong, wouldn't get the g1 due to less ram slots,
not much else to offer,
personal choice,
the asus has over clock key thing for easier bois access,
and the ud7 has a really nice set up. ... but only 4 dims not 8
that narrows it down to the Asus.
thats my reasoning at least,
all are killer boards though,
recommendation - the asus thumb.gif
my choice - the ud7 -its just to dam pretty with so much orange. thumb.gif

BTW all will have good enough internet controllers and audio, those card are nice extras but not required at all,
the asus has all that stuff built in already, nice high quality on that asus board

yea the G1 have a premium price b/c they actually have premium parts, it isn't the same as XF-I like advertised on ROG, or Bigbang, as those are just realtek ICs with XF-I software, the G1 series has a REAL Creative CA202K audio processor, the amps, caps, and DACs/ADC which are all in a reference creative sound card. The Bigfoot is also pricy, but depends if you want to use it.

I don't even think you can buy a UD7 to my knowledge, but it isn't really a workstation board.

IMO what are you looking for? do you need 8-DIMMs? Do you need 4-way PCI-E spacing? Remember while the G1 assasin2 and the R4E are eATX, the UD7 is ATX-XL.

I would personally choose the RIVE hands down. Personally, I don't think the UD7 has anything that sets itself apart from the others. I don't like the Assassin because of the colour scheme. The RIVE has been known to be a great overclocker and has been the board of choice for some world record speeds. Many reviews have also stated the RIVE is one of the best-built motherboards that Asus has ever produced.

If price is not a concern for you, I think the RIVE will be a great choice.
