Depending on what editing software you use you might be better off with an nvidia GPU, Adobe Premiere Pro (and possibly other programs) use a cuda accelerated media encoder for some effects and this is significantly faster than cpu encoding, but only compatable with nvidia cards.

Eh on the 16 gigs. Rather get the above upgrades before 16 gigs. Been using 8 gigs at home for my work rig and its been fine, work rigs all have 16 gigs and I don't feel much difference (maybe a few times when using huge raws).
Why not just buy the best you can with the company's money than throw some more of your own for the video cards?
Edit: Having more RAM may or may not improve your time encoding, you're better off getting a better CPU which will definitely improve encoding times.
If you're using Adobe products, you might want to get an nvidia video card.

Yeah, I decided to drop to 8gbs, and I'll upgrade later if I need to.
The Main use will be gaming, as it is part of my job, but editing is in it as well, which is why I didn't go to the i7 because I felt that I didn't absolutely need it.

Edit** I use Sony Vegas to edit.

I don't use that software but I think it uses Cuda. If you planning to use Cuda, you should get the best nvidia GPU you can (no point getting a GPU that'll render slower than your CPU).

I had an i5 before getting the i7. It makes a difference in a lot of small things (like the comp booting up faster). I hate working at home and want to finish it as soon as possible, thus I'm willing to spend a few extra bucks to save some time.

For games, eh its only faster due to its higher stock freq in most games.

Good luck, and wish I had a job playing games. If they ever need somebody else let me know!

I COMPLETELY understand the stabbing people thing. It's more of a side thing right now, as I'm still in high school. It gets me free games sometimes and I get to meet a lot of new people.

Last advice I can give, the 6870 is okay for gaming. If gaming is the main goal try to upgrade this to at least a 560 TI or a 6950. I have a single 6870 (backup rig) and its just not powerful enough to push some games at max settings at 1920x1080.

I am gonna go with the 6950 2gb, I don't wanna play PC without getting the full 1080p effect!

This. Save some money by going 8GB on the RAM and boost your GPU's performance with a better card. For around 200 you can still get a 6950 2GB. I have nearly the same setup as you, 2500K @ 4GHz, 8GB RAM, 6950 OC'd, and I clobber everything thrown at me.
