Do you think I'd get full 100% usage with two 7870s using a 2500k at 4.5ghz? How about people with a 2500/2600k and two 680's, what's your GPU usage like? I don't want to have to go to SB-E due to the price, but I will if I have to.

There is like no setup that a 2500k cannot push as well as any other cpu.
A 2500k CANNOT run quad sli with 4 graphics cards, therefore that is already out of the question. You pretty much have to get X79 if you want 4 cards.
Basically with a 2 card setup you will see no noticeable difference between a 2500k or a 2600k or a 3930k, except when you look at the final score of a benchmark.

It depends on the resolution and what games your playing. If your running 640x480, your most likely going to have the cpu maxed. Playing at 1080p I don't think you would have any trouble with any 2 gpu set ups.

For the most part I agree, but aren't there games where the 2600K pulls ahead? BF3 scales excellently to lower cpus with the same gpu, but games like skyrim depend on the cpu a lot.

I'll be playing at 1080p, and as we know, the higher the res the less CPU dependant and the more GPU dependant it becomes, but I was just a tad worried that I was overestimating what a 2500k could do when dealing with such a ton of GPU power.

Just take a look at these benchmarks.
http://www.tomshardware.com/reviews/core-i7-3960x-x79-sandy-bridge-e,3071-15.html
The 2500k is pretty much going to perform identical to the 2600k in every game.
Although I don't see why you cannot spend the extra ~$100 on a 2600k if you are going to be spending ~$700+ on gpus if you are worried a 2500k won't suffice.

That's my line of thinking...a little HT never hurts. I'm hoping the 2600K/2700K goes down in price a little before August. I'm probably guna go with one of them instead of the 3770K.
