Looks like you are headed in the right direction.
I don't use Afterburner (cause I don't really OC Videocards) But in Catalyst Control Center you have to enable Crossfire. I'm not sure if Afterburner has this setting?
Once you are sure everything is in order. (Running a few benchmarks and such to verify)
Then it wouldn't be a bad idea to OC. The 6 Core Thuban is pretty decent when overclocked.
If you ever get the chance though, a AMD 7850 is a decent Video Card for $250 (Overclocked it's similar to a GTX 580, or so the reviews say)
The 7850 is my next upgrade (although if I ran into more cash I'd get the GTX 680)
