Also, you better believe I threw my $30 at Intel for OCing protection. Nice to know that no matter what I do to this $1k processor I'm covered!

Yeah, if you already have a SB or SB-E CPU (and imo also an X58), you'll not really notice the difference in everyday life situations (including gaming) with IB.
But if you still have like a Pentium 4 or something like that, this is a good time to upgrade.
Other than that there's not much more to say: a slight increase in performance (not that you'll really notice it though), far improved integrated graphics, better power consumption (if you care about that sorta thing), PCI-E 3.0 support (which is useful if you have a Radeon HD 7970 or GTX 680 gpu, otherwise... not that useful in comparison to PCI-E 2 boards)

If you plan on overclocking it at 4.2~4.5, I'd definitely go with Ivy.
If you plan on upgrading to IVY-E, I'd go with x79.

Wasn't that a lot better with SB and SB-E? I mean, temperature-wise. Even a simple overclock to 4.5GHz gets you close to 70° with IB, according to that graph.

I'd keep my current setup a while longer and wait for IB-E.
No point in getting a great X79 MoBo with a (imo) crappy 3820 CPU.
