I know, I might just get the 16 straight, but maybe it is smart to get 2*8GB dimms, just because then I can still upgrade later. They are not as fast, do not overclock as well and are more expensive (for the GB) so I'm not sure.

Fair enough, so I still have to see what I'm doing about my GPUs, if I'm sticking with my 680 then I have enough money for 16GB, if I go for the 580 Lightning Extreme (with custom blocks) I am already broke
(for a tenth grade, this is an expensive hobby)

If I were you I'd get the Crucial Ballistix Elite 16Gb in the 2x8 stick kit I found for $190 and plan to use in my new build. You've got a great ASUS board (I'll be getting the Sabertooth 990FX) and can eventually upgrade to 32Gb, which IMO you'll be wanting to do sometime in the future.
These are DDR3 1866, have CAS latency of 9, timings of 9-9-9-27, a damn good heat spreader and all this at 1.5v. IMO they are some of the best on the market today and I have no doubt that if you are thinking quad channel for a future board that supports it, but you're budget is tight right now, you might be better off settling for a dual channel kit now, since the board you have doesn't support quad anyways, but when you do go quad memory, a matching 16GB kit would mesh right in with the originals for quad channel operation no problem.
