Well, transcoding on the 680 is definitely faster (http://www.hardwaresecrets.com/article/EVGA-GeForce-GTX-680-Video-Card-Review/1523/13; http://www.guru3d.com/article/asus-geforce-gtx-680-asus-directcu-ii-top-review/8) and logic would dictate that it's the same for encoding compositions on Vegas.

not sure if Vegas supports it but with the new Kepler architecture they introduced NVENC which is hardware-based acceleration.
in theory it should be faster if the application supports it; otherwise the 580's CUDA will be faster.
