In my case it was worth 2 drives but not the 3rd.
1 drive reads around 120mb/s, 2 reads 220mb/s peak and the 3rd only got me to 260mb/s peak with a 128k stripe.
I doubt any setup is going to scale linearly but in my case 2 drives was worth R0 while 3 was not, but you have a lot of cache with those drives so it may be worth trying 3 and a 64k stripe.

For games, using non RE WD drives is probably OK
But I didn't think WD caviar drives were safe with Raid, because of TLER (time-limited error recovery)

NOTE: the WDTLER.EXE tool is no longer available from Western Digital. WD phone support confirmed that new disks cannot have the TLER setting changed, i.e. RE disks are only suitable for RAID arrays and Caviar are only suitable for non-RAID use. WD also say that using the WDTLER.EXE tool on newer drives can damage the firmware and make the disk unusable.

I use two WD RE4's in RAID0 and in real life it seems almost as fast as my SSD.

I run 2 SATA2 WD Blacks 500 gigs in Raid 0 as my games / video recording drives.
The 1 gig capacity split into 2 volumes (raid 1 / raid 2)
Performance is ~ 210MB read, ~205MB write.
128k stripe size.
Honestly I think the performance is excellent. Games load quickly, moving files from the array to my SSD and back is very very fast. I encode lots of massive video files (fraps) and I can move these huge files around fairly quickly. I also don't have to worry about the drive fragging like a single drive would with all the writing and deleting of files. I make these drives work!

access times go up a bit which is a bummer, also make sure you have IDENTICAL drives, and do speedtests on both first (you may have 2 same model number but different batches/speed). Differences in speeds will negatively affect your performance increase.
I did it for a while with two 250Gb drives, performance is there, but its easier, faster, and less headache to shell out more cash for a faster drive... A good (1x1TB platter) 1TB drive is likely to perform better then (2) 2x250GB platter 500GB drives in Raid0.
Or just go out and short-stroke your drives: http://www.overclock.net/t/629402/short-stroke-side-by-side-results/0_20
