no, it still ends up doing it even though it's set to custom

I was having similar issues - mine differed slightly, but I've gotten it reduced significantly. The issue was Dwm.exe was taking up large amounts of memory, at which time it would cough up some crap about "exceeding the allocated memory." The desktop would then switch to basic and the dwm.exe process goes away entirely. Dwm.exe is the process that handles desktop compositing:

MS recently released a patch for dwm.exe that helped reduce the number of these incidents for me:

Initially they only had x86 and ia64 builds, but they released the x64 build last week. Since I've installed it the issue has only occurred twice for me.

That would explain why it's doing it. Pony up some cash for a product key and all your problems will go away.
