When i got the 580 I had to rethink my entire OC stability testing regime due to FM / OCCT now not working on them.

I'm pretty sure it's always been on all of the 500 series. Here's this from Anandtech and I'm sure there are more mentions of it's OCP in launch reviews that are even more clear cut than this is but this still says they had to disable the OCP to get an accurate Furmark reading

I'm going to be getting my rig setup very soon, is it even worth folding while I'm at work and stuff? It isn't very powerful, FX-8120 and a 560 Ti.

Any amount of folding you can afford to do is worthwhile. Especially times that you don't need to use the computer because it will fold even more efficiently when left to just fold rather than also be used for other everyday things as well.

I think calling a Bulldozer / 560ti rig "not very powerful" is a mistake. Compared to 98% of computers in the world your machine is a beast. Dont let anyone get you down about it with "CPU X or GPU Y is better" talk.

You will net very good folding numbers with your rig. We'd be happy to have you on the team.
