Can't get ANY kind of overclock out of my EVGA 680 Signature

So, just picked up an EVGA GTX 680 Signature, and I love the card - but last night I went to go overclock it a bit, and much to my surprise it felt like if I even did something as small as 25 MHz to the core clock it would crash. I upped the voltage to 1075, and had originally started with trying to get a 100 MHz overclock to the core, and a 300 MHz overclock to the memory. Crashed out in Heaven 3.0. Kept dialing it back and back, and even though the card never got above 60C, it would crash out. Default Signature clocks run just fine, but even a miniscule overclock causes the card to fail. Is something wrong?

EVGA Precision X settings:

Power Target: 125%
Core: +50 MHz
Memory: +99 MHz
Voltage: 1075

This miniscule overclock wouldn't stay stable... and I can't figure out what is going on. I own an ASUS RAMPAGE IV Extreme and I'm tempted to up the voltage in the UEFI, but I want to ask here first.

Specs:

CPU: i7-3930k @ 4.7 GHz (vcore 1.335)
RAM: 16 GB Corsair Vengeance 2133
GPU: EVGA Signature w/backplate GTX 680
MOBO: ASUS RAMPAGE IV Extreme

I appreciate that, but I think it's less of not knowing how to OC the card, more like I'm having some serious technical difficulties overclocking it. Like it peaked at the EVGA manufacturer levels.

I briefly got 1183 with a small OC, then it started crashing.
