Am I doing something wrong here? I've run through Heaven from anywhere from +135 to +143 and it never goes past 1189mhz on the core, it does not budge past that. I have my power target set to max and my voltage set to max. Anything I'm missing?

Alot of money cost for not alot of Performance increase you can still O/C that CPU a fair bit & your GPU runs like a 680. Better off waiting for the next Gen to upgrade unless you want E-Peen

the thermaltake armor A30 doesn't have enough expansion slots nor do i have a motherboard that's SLI compatible.

In a gaming scenario, an i5 would give equal performance to an i7. An upgrade would suit someone who was intending on starting video rendering or 3D modelling, Photoshop, etc. Of course, the enhanced architecture and hyper-threading would net you higher 3DMark scores, but last time I checked, I didn't PLAY 3DMark11, and I am not sure anyone else is, either. What you need to do is decide what you want your machine to perform before you buy your hardware, and then fit the best parts to achieve your goal without breaking your budget. Even upgrading to LGA 2011 platform CPU's would not improve performance in gaming much. The best thing to do would be to add a second 670, which would DEFINITELY help a great deal in gaming. But I would not recommend this either, because I have experienced crossfire set ups before and have reverted to having a single powerful GPU rather than 2. Driver issues, games not supporting dual GPU set ups out of the box and a host of other problems have made me a little wary of opting for a SLI/crossfire set up.
