What is best

Geforce Gtx:
2x 570
or
1x 680?

Build used for hardcore gaming

Games like: mw3, Bf3, WoW, League of Legends and diablo 3

I also record while gaming, and video editing.

570 sli will give better performance if that is all your concerned about, they will use a chunk more power too. Not as bad as 480s though.

Negligible.

570 SLI perform as good as a GTX 590 which is around 10% faster than a 680.
You'll have way more VRAM with the 680, less power consumption and can OC the card to match or exceed the performance of stock 570s SLI.

I'd say go for the 680.

If you were choosing between the 570 SLI and the 680, it'd be better to get the single faster card. Reason being, you get more VRam, no stuttering, less power consumption and you can always add another down the line if you wish to thumb.gif

Honestly get a 670 and sli them later if needed. And it seems like they actually have some 670's in stock at TD. That's opinion.
