I will replace my current 6850 with this card. My max budget is $350 so a 670 is a no-go. I will use the card for mostly video editing and 3D modeling/animation. I need the CUDA cores, so an AMD card is not really an option. I will also do a fair amount of gaming, so a Quadro isn't really an option either.

So which one should I get? I'm really stuck here

I would just wait the 670 should come down in price, but if you can't wait you should look on the market place for a better deal.

Between the 3, I'd probably get the 570 with 2560MB of ram.

I'd get a GTX 580. You could get one for 350. Look at individual sellers on amzon. I got mine new for 335.
