Understand that Thunderbolt is an interconnect that also can carry a DP signal.
The DP connection on a 7970 and the DP port on a mac monitor are the same.
So, yes you can, but Thunderbolt has nothing to do with it, they just added something to the existing DP connection on their machines.
Further, with the new mac monitors, the cable is built into the system, it comes as a mini-DP connection, USB, and Magsafe (for a laptop). If you bought a mac monitor new (which would be silly unless you like wasting dollars) then you would need no additional cables.
