Unfortunately data is scattered all across platters, so until most of the drive is saved, you don't even have stuff like the MFT (stores the filenames of all the files in the partition) and can't access or mount or chkdsk the partition.
It's sort of an all-or-nothing situation. Once you've salvaged all that you can, chkdsk may be able to repair the holes in the filesystem, leaving you with most of your files.
But if it's critical that you get that stuff back, and you don't care if it costs $500-2000, then professional data recovery may be the way to go.
