I can say with good confidence that you won't hit a VRAM wall with a 570 if you're gaming at 1080 right now. I don't believe there are many (if any) games thusfar that will use more than 1.3 GBs of VRAM at 1440p, either; BF3 perhaps. For Eyefinity/Surround, I'd suspect there are a few that do, and many that come very close.
I wouldn't purchase a 570 if you plan to game at 1080 for the next 3 years. Within 3 years, you'll almost definitely need to go SLI and then you'll find yourself hitting the VRAM wall soon after. This is the inevitable problem with calling this a high end card; it doesn't have the longevity that it ought to for it's pricerange. If you upgrade every year or two, the 570 is a good choice right now but arguably not the best.
Really, I don't think any person should be buying these right now.
