I'm sure the answer is yes, but is RAID 0 is fine for handling three SSDs? I want to join 3 x 256GB SSD drives using an LSI MegaRAID controller. Thanks.

Yes you can. You can put any amount of drives that your controller allows into a RAID 0 array. Your LSI will be just fine
