.....well that didn't work.
I burned the iso onto a DVD, and it booted into a live environment. Sweet! Partitioned my space as suggested (with only 256Mb for /boot), installed GRUB to the MBR (presumably - it said /dev/sda), and installed the system. Rebooted, and an warning comes up on login about permissions for $HOME, and the session wouldn't be retained. So, I check my /home folder, and it's actually "/home/username" (username kept private here), instead of just /home. I guess it's normally symlinked, or otherwise hidden/abstracted? Anyone, it was owned by root, not by my user. Various combinations of sudo, su, logging in as root, even dropping to a low runlevel and logging in as root, wouldn't let me chown my home folder. A quick Google around talks about using NTFS for /home under Ubuntu, and that it doesn't work as NTFS doesn't have the right attributes to get the permissions working right (something to do with links or Unix permissions). I guess the system defaulted to root during the install, and chown doesn't have the power to modify an NTFS folder.
TL;DR - using NTFS for /home doesn't work.
I reinstalled using ext4 for /home, and it's all good. I'll have to work out some other method of sharing data between Windows & Linux. For now, I'll stick with what I've got, just need to "pretty up" GRUB and I'm settled
