Folding is probably the best stability test in my opinion.

Agree with axipher

Folding is my ultimate stability test. Before I fold on new clocks I use Heaven and 3Dmark11.

Furmark and OCCT use to be my benchmark programs but they are not reliable now with the 500 and 600 series Nvidia cards. I cant comment on Ati cards.

ATI cards for sure are tricky.  I was able to get 1025/1175 MHz on my 6870 in Furmark stable and Kombuster.  For some reason though I was getting random crashed in FFXIV and couldn't figure it out because they were popping up as BSOD implying memory errors.  I tried folding and it would never get 1% of a WU done.  Dropped the clocks back till it would complete a WU and FFXIV stopped crashing.  FPS went up quite a bit as well in Source games, my card was spending more time in error correction then actually rendering.

Just play the game you want to play. Furmark, OCCT, etc. are all unrealistic.

That folding test is a good point, but only really if you are folding. Clocks don't hurt cards, just voltages and temperatures, instability doesn't cause damage either. Just play your games and if you have issues then fix it.

I tend to agree with you DirektEffekt.

I think axipher and I do that because we need our clocks stable for folding, so we tend to go to the nth degree to ensure that.

But your right, it wont kill anything and if there is an issue lower your clocks or volts or both.
