Also do you know if there is some sort of cahrt or graph too compare or see how much estimated vram will be used at certain resolutions?

I think the main thing is.. that almost no games really use that much, there was also an interesting post from a moderator that explained that, although some games do use more than say, a 1GB (I believe his example was skyrim pulling 1.4GB on his 1GB card) there was absolutely no perceived slowdown because it was pretty efficient at using it, and it didn't require all 1.4GB at the exact same time. A bit vague, I know, but there you have it.
That being said, I think Max Payne right now (or skyrim with a super texture pack) are the most VRAM intensive games out there right now. I think that maybe you could get 2GB usage on them... possibly a tad more, probably not suffer slowdown. However, in the near future, Hawken, etc, some games might start capping over that (and this is strictly speaking 3 monitor setup).
Despite the looks, go with the EVGA 4GB. It will futureproof your rig for triple monitor setup. I am perfectly happy having 2x Gigabyte's at 2GB cuz I never plan on having more than one monitor.
If you really want to, you could wait until ASUS or someone else offers a "better looking" 4GB Version... Honestly tho, the EVGA one was the non-reference good cooling solution, I think it will be just fine. These cards really dont run that hot.
