This build focuses more on the work side of the equation, but will be no slouch when it comes to gaming. Also, I stuck with the Fermi card to keep the Cuda cores for better use in Autocad and the like.
Xeon? I thought that the main appeal of those was ECC RAM.
I would strongly suggest a GTX 480 over a GTX 560; though, a 670 would be better if you went with that previously suggested build.
A caviar green is better than a black for storage, as speed doesn't matter for storage.
I think the 600T is a better case than the 550D.
