You need back up all your data, images, music and those stuffs. In other words, make a copy of all the content of your phone to an external storage device.
You also need make a backup of the current ROM of your phone, in case that something goes wrong or your want re-sell the phone in future with the stock features.
After that, check here for the best ROM: http://forum.xda-developers.com/

I would research the method to SBF your phone in case things go sour. If you can;t SBF back to stock you might run into a dead end. Knowing you have the option to go back to factory, day 1 stock at any time gives peace of mind.

If your Samsung Galaxy S3 will be a GT-I9300 non-US version (i.e. if it's the international version), have a read through my guide to rooting it:
http://gibdigital.blogspot.co.uk/2012/07/how-to-root-samsung-galaxy-s3.html
It's extremely risk-free with the Samsung Galaxy S3 given how rootable Samsung has made it. Once you root, have a read through my guide to creating backups and restoring them:
http://gibdigital.blogspot.co.uk/2012/07/how-to-backup-and-restore-your-android.html
I'm in the process of writing a new post to cover installing custom ROMs but this should be easy for anyone who has done this kind of thing before!
Above all, enjoy the Samsung Galaxy S3 - it's a beast of a phone!
