I already own one 7850 and I am thinking about picking up another for a future eyefinity set up 1080x3 whatever the resolution is will I be able to max out games with a pair of these on an eyefinity setup?

in my opinion, no. on one screen at max settings i've had bf3 hit 1600 mb of vram. this is with ultra settings and max aa/af. imagine 3 screens. however, on 3 screens you wouldnt want to have settings like aa/af at max because of the giant loss in fps. if you use reasonable/lower settings than you can manage at 5760x1080 but you will definitely hit your vram wall if you turn the settings up high enough.
so imo if you want to look well into the future I would recommend a 3/4gb card like a 670/680/7970/7950 in sli or crossfire.
i dont know much about a 7850s performance, but I assume if two 670/680s is needed for reasonably high settings in a game like bf3 at 5760x1080, then two 7850's probably won't cut it.
im judging by the fact that you want max settings and not low/med settings.

7850 speeds will not even be close enough to max out games at 5760x1080, so good luck coming close to that 2GB cap with a playable framerate,

The memory isn't that big of an issue, if one at all really. The problem is you won't have enough horsepower to run anything at max on a single card, let alone medium settings.

The minimum you need to aim is HD 7950 CF for a 3 x 1080p. Even that you need to overclock to 1.1 Ghz to play a game like BF3 at 3 x 1080p at the max settings (Ultra 4x MSAA) and get around 50 fps . Also 2GB VRAM is not enough for BF3 Ultra 4x MSAA at 3 x 1080p. So your best option is a HD 7950 OC card like the one below selling for USD 310 after rebate.
