After some reading I have noticed that SLI can be enabled on 965/975, but you will not get the full x16 bandwidth and you will have to use modded drivers (from what I've just read).
Nope, no need to pay more for the same.

As mentioned, if you're 100% buying the x6800/QX6700, then it's okay to go with an Nvidia based motherboard

Actually, No. As long as the ICs used are Micron D9GHM, they should be capable of 1000+ MHz at slightly relaxed timings. Crucial, G.SKILL, Patriot, Team Group and others are all using these ICs in their highest end memory, but the real bargains are getting the stuff rated lower like this, and overclocking it... It's the SAME memory, just with different SPD.

True.

What if he decides to overclock the thing anyway? Then he'll be stuck. I say waiting for the 680i could be the better option?

Whats the 680i? what did you mean by the 775 needing modded drivers for SLI?

I disagree. Time & again nVidia chipsets have proven inferior to Intel chipsets when used with the Intel platform. That's just the current state of things right now. Once nVidia gets the 6xx series chipsets going, that may change, but right now, they're not available, and are unproven at this time. The only real proven performers for C2D and C2 Extreme right now are the Intel 975X & 965 chipsets. DFI should have their mobo based on the ATI RD600 chipset that should dominate the field, but again, it's not released to the public yet and as such, I consider unproven.

The 680i is Nvidia's new chipset that is suppose to fix the OCing problems they currently have (Released Nov 8th)

By modded drivers he means hacked ones that let you use SLI on Intel chipsets

The 965 and 975 need modded drivers for then to work in SLI.

The 680i is the new nvidia chipset due out very soon.

That water block is the same for 939 and 775 from what I've seen, the danger den RBX. But the see-through plastic mounting mechanisms are different which look difficult to change (if not impossible). Finding the new mounting plastic thingy would be difficult too.
